Instructions on how to make a very yummy clootie dumpling!
 
Clootie Dumpling
(Serves 12 or more)

Ingredients:

3 cereal bowls of self-raising flour
1 packet of Atora suet
1 heaped tsp of cream of tartar
1 level tsp of baking powder
1 bowl granulated sugar
1 tsp of cinnamon
1 tsp of mixed spice
1 tsp of ginger
1 bowl of sultanas
1 heaped bowl of raisins
2 tsp of golden syrup
2 tsp of treacle
640 ml (23 fl oz) hot water (approx. )
1 large piece of cloth, about 80cm square - cotton sheetin will do.

Instructions:

Set a very large pan of water to simmer on the stove, with a saucer in the bottom to take the pudding. Mix all the dry ingredients. Add the syrup, treacle and hotwater and mix.
Sprinkle cloth with water and then lightly dust it with flour. Put the pudding mixture in the middle and bring side up, tying together tightly with string.
Towards the end, heat he oven to 200c,400F or gas mark 6.
Remove pudding from pan, set to drain over a large colander or something similiar. Untie the string and slowly peel away the cloth, laving a lovely round pudding. Before you take the cloth away completely, invert onto a large plate and pop the whole thing into the oven for three minutes to give it a crust.
